What is the Guinness Surger?
The Guinness Surger is a sonic device that activates nitrogen in specially designed Guinness cans, creating the cascade and creamy head of a draft pour at home. It uses ultrasonic waves to agitate the nitrogen in the beer.
Did you know?
The Surger was introduced in 2005 and quickly became popular in Japan before spreading to other markets. It was Guinness's first major at-home draft innovation.
What You'll Need
- Guinness Surger unit
- Guinness Surger cans (sold specifically for the device)
- A proper pint glass
- AA batteries (4 required)
Important: Use the Right Cans
The Surger requires specific "Guinness Draught Surger" cans. These are different from regular widget cans:
| Feature | Surger Cans | Regular Cans |
|---|---|---|
| Widget | No widget | Contains widget |
| Activation | Via Surger unit | Opening the can |
| Availability | Limited | Widely available |
Warning
Regular Guinness cans with widgets will NOT work properly with the Surger. The device is designed for widget-free cans specifically formulated for ultrasonic activation.
Setting Up Your Surger
Step 1: Insert Batteries
The Surger requires 4 AA batteries. Insert them into the compartment on the bottom of the unit, following the polarity markings.
Step 2: Position the Unit
Place the Surger on a flat, stable surface. The unit should be at a comfortable height for pouring and placing your glass.
Step 3: Add Water
The Surger's plate needs a thin layer of water to transmit the ultrasonic waves. Add about a teaspoon of water to the metal plate on top of the unit.
Pro Tip
Use cold water for best results. The water helps conduct the ultrasonic waves from the unit into the glass.
The Perfect Surger Pour
Step 1: Chill Your Can
Ensure your Guinness Surger can is properly chilled (3-5°C). Store cans in the fridge for at least 24 hours before use.
Step 2: Prepare Your Glass
Use a clean, dry tulip glass. Pour a small amount of cold water in and swirl it around, then empty. This helps with foam formation.
Step 3: Pour the Guinness
Open the can and pour the entire contents steadily into the glass at a 45-degree angle. Don't worry about technique at this stage - just get it all in.
Step 4: Activate the Surger
Immediately place the filled glass on the Surger's metal plate. Press the button once.
Step 5: Watch the Magic
The ultrasonic waves will create a cascade effect, with the surge moving from bottom to top. Wait 15-20 seconds for the head to fully form.
Step 6: Enjoy
Once settled, you should have a pint with a thick, creamy head similar to a pub pour.
Troubleshooting Common Issues
No Cascade Effect
- Check batteries are working
- Ensure water is on the metal plate
- Verify you're using Surger-specific cans
- Can may not be cold enough
Weak Head Formation
- Can temperature too warm
- Glass not clean (grease affects foam)
- Surger batteries running low
- Using wrong type of can
Excessive Foam Overflow
- Can was too agitated before pouring
- Water too deep on plate
- Pressing button multiple times
Warning
Pressing the Surger button multiple times won't improve results - it can actually cause over-foaming. One press is all you need.
Maintenance Tips
Cleaning the Unit
- Wipe the metal plate clean after each use
- Don't submerge the unit in water
- Keep the battery compartment dry
- Store in a dry place
Battery Life
A set of batteries typically lasts for 200-300 activations. Keep spares handy if you're a regular user.
Storage
Store the Surger in a cool, dry place. If not using for extended periods, remove the batteries to prevent corrosion.
